The lady you see here is Mrs. Deborah. She is 85 years old. She hates to have her picture taken but I got lucky enough to get this shot of her, although she got mad at me for doing it . Her grandson, Chico(in the bottom-most picture) taught me how to make picos(second picture) the other day. Picos are a special pastry bread that Mrs. Deborah makes to sell. They are made from the same dough used to make her coconut bread. It is cut into small balls and rolled extremely thin. Then they fill it with sugar, cinnamon, vanilla and a special kind of crumbly cheese.
They are extremely good especially when they are fresh out of the oven.
Mrs. Deborah Howard, a lady in our church, makes her living by selling coconut bread every day. Also she sells charcoal and bags of ice as side businesses. The machine in the third picture is used to knead the dough until it is ready to be cut. I made it my summer job to help her make bread. We normally start at 7:30 in the morning and finish the dough at 9:00. It is then left to rise for a few hours until it's ready to be baked.
Here is the recipe that she uses:
Coconut Bread
the milk from 5 coconuts
5 teaspoons of yeast
1/2 pound of lard
25 pounds of flour
3 pounds of sugar
4 oz. of salt
Mix coconut milk and yeast until yeast is dissolved. Add lard, sugar, and salt mixing well after each addition. Lastly add flour and knead your dough until it comes out smooth on the surface.
Makes approximately 12 loafs and 140 long breads

This is my very special Sunday School class. I have kids from 7 years old and under. The youngest little girl inmy class is Mimi, the little girl in the pink dress standing in the front. She is three years old and loves to sing "We're in the Lord's Army". The class averages about 10 kids every Sunday.
These are my friends from church. The girl on the far right is Georgina. Beside her in the green dress is Belquis. Beside Belquis is my Mom with her Mother's Day rose on. And behind them is Shandy. We have created nicknames for each other. Belquis' nickname is "Tomato" because her last name is Tayton. Shandy's nickname is Lizzie because her middle name is Elizabeth. Georgina's nickname is Gina. And they call me Nicholy because my middle name is Nichole.
